Sometimes it's the simplest foods that make the best meals. The following recipe only has a few ingredients, none of them exotic; and yet, the aroma from this dish is heavenly!!!
Chicken and Sausage Casserole
2 Tablespoons Olive Oil
4 Boneless Skinless Chicken Breasts
1 pound hot ground sausage
1 onion chopped
2 cloves garlic, crushed
1/2 cup apple juice or balsamic vinegar
4 plum tomatoes chopped
1 Bay leaf
2 Tablespoons fresh parsley chopped
salt and pepper to taste
Heat oil deep frying pan over medium heat. Brown chicken on both sides, set aside. Add Sausage, onion, and garlic to chicken drippings, brown. Stir in the juice (or vinegar), tomatoes, bayleaf, parsley, and salt and pepper. Return the chicken to the pan. Cover and simmer for 30 minutes. Serve with Basmati rice.
